In a bowl, mix together the all-purpose flour, sugar, baking powder, baking soda, black pepper, and salt. Then, add the eggs, buttermilk, and olive oil and whisk to make batter. Finally, add the cheese and scallions to the batter and mix gently.

Heat a non-stick pan or griddle over medium. Drizzle the olive oil and spread it evenly to coat the pan/griddle.

Pour a big spoonful of the batter on the hot pan/griddle, spreading in about 4 inches disc. Drizzle a few drops of olive oil, and cook for about 2 to 3 minutes until the edges begin to set and the side facing the pan/griddle turn golden-brown.

Flip, drizzle a few more drops of olive oil, and cook for another 2 to 3 minutes until the side now facing the pan/griddle is golden-brown and crisp.
Step 5
Your Scallion Cheddar Pancake is ready. Top with more scallions before serving.
